Hey Friends, this is random I know, Here we post about everything , ministry, family, euligies about espresso machines, even recipes. ! I know some of you are like me, you enjoy cooking, but sometimes find your self in a rut and need some fresh ideas, but don't want to have to buy a laundy list of items to bust out a flavorful meal for your friends or family, So here it goes: This is a BOMB, super tasty, CHEAP ( $6.91 , excluding spices) dinner that serves alot, ( probably 6) keeps well and is good leftover. The ingredients sound disgusting when you read this list, but if you like Indian / ethnic food, you will like this.
My friend Katie was giving me some dinner inspiration as I was planning meals for the week..
What you need:
1 can of black beans drained and rinsed ($.59)
1 can of original Rotel Tomatoes ( undrained, throw entire can in pan) ($.79)
3/4 c onion ( white or yellow) ( $.65)
buy small bag of frozen peas and carrots ($1.19) Only use 2 cups
1 c of chicken broth ( or 1 chicken bullion cube and 1 c of h20)
1 can of coconut milk ( 1.69)
Prepare 2 c of Jasmine or Basmati rice ( it will make alot of rice if you want some for leftovers) ( $1.89 for a 2lb bag)
salt to taste
1 1/2T curry powder ( i already had some, but I don't think its that expensive)
sautee onion until tender, add veggies, cook 5 min or until de-thawed, put in rest of ingredients, and spices in pan, cover in large pan and let simmer for 30 min, taste. I think the spices are correct, I'm not all that accurate of a cook, I just throw it all in, so you might want to start with what I put down and add according to your taste: ) This isnt too spicy for kids either, Ava had it for dinner, so its good for your entire gang.
Server over rice.
BOMB, Cheap dinner. And its good for lunch or dinner leftovers.

Oh my gosh blogger famimly- I made this and it is awesome! I made it tonight and holy cow... yes the ingredients look sick, but is is wonderful !
Sounds yummy! I love curry! I like to make yellow halibut curry over rice. It is so yummy but Jeremy doesn't like curry :*( so whenever I make it I have to eat it for days...
